Gabby's Pierogies

Chef up these delicious and yummy Polish potato and cheese pierogies! A nice, fulfilling, and appetizing dinner!

What You Need:
  • all-purpose flour

  • salt

  • milk

  • eggs

  • unsalted butter

  • sour cream

  • russet potatoes

  • yellow onion

  • black pepper

  • garlic powder

  • cheddar cheese

Steps:
  1. Add the cubed potatoes and 1/4 diced onion into a pot with boiling water. Let the potatoes sit for 20 minutes until fork tender. Drain the water and add butter, sour cream, salt, pepper, and garlic powder. Use a hand mixer until smooth. Add cheddar cheese and set aside.

  2. Use a stand mixer and add flour and salt, along with milk, eggs, melted butter, and sour cream to a measure cup and whisk. Pour into the flour and salt mixture. Then, start at slow speed and increase to high. The dough should be mixed for 10 minutes. Transfer the dough to a greased bowl and let rise for 30 minutes.

  3. Once the dough has risen, divide it into quarters and use a glass cup to cut out circles. 1/2 tablespoon of the potato filing is placed into the center of each piece of dough. This is then folded into a half-moon shape and the ends are pinched. This is then repeated until the ideal amount of pierogi is met.

  4. In a pan, dice onion and add it to a skillet with butter over medium heat. Once the onion is caramelized, stop. The pierogies are then added to a pot of salted boiling water until they float to the top. Then transferred to the caramelized onions to coat. Then, you're done!
