Greek Spanakopita

What You Need:
  • 1/3 cup olive oil

  • 2 pounds spinach, washed and drained

  • 1 bunch of scallions, chopped

  • 1/3 cup finely chopped parsley

  • salt and freshly ground black pepper

  • 1/2 pound feta cheese, crumbled

  • 2 eggs, lightly beaten

  • 1 cup (2 sticks) unsalted butter, melted

  • 1 pound filo pastry dough

Steps:
  1. Heat 1 tablespoon of olive oil in a large skillet. Add half of the spinach and sauté until it wilts tossing with tongs (about 2 minutes). Remove spinach, squeeze out extra liquid and chop. Repeat with remaining spinach and 1 tablespoon of olive oil. Pour out any liquid from pan and add remaining olive oil and scallions and sauté until soft (about 3 minutes).

  2. Add the spinach to the scallions with the parsley and salt and pepper for about 2 minutes and remove to cool. Stir in the feta and beaten egg to the mixture.

  3. Butter a 9x13 inch baking pan.

  4. Spread 6 sheets of filo brushing each with the melted butter on the bottom of the pan. Spoon the spinach filling over the filo. Cover with 6 more sheets of filo, brushing each with melted butter and score the top 3 sheets with a sharp knife.

  5. Bake for 40-45 minutes at 350℉ or until top is golden.

  6. Let stand for 15 minutes and then enjoy!
