Do you like hard-boiled eggs? Do you like curry? If you answered yes to both, sit tight because you are going to make a delicious meal of egg curry on bread!

What You Need:
1/4 cup neutral oil (grapeseed or canola)
2 medium yellow onions, chopped
6 garlic cloves, finely chopped
1 (2-inch) piece fresh ginger, peeled and finely chopped (roughly 2 tablespoons)
2 small cinnamon sticks
6 green cardamom pods
6 roma tomatoes, finely chopped
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
1/2 teaspoon cumin powder
1/4 teaspoon cayenne pepper
1/2 teaspoon whole black peppercorns
1 teaspoon kosher salt
1/2 teaspoon garam masala
6 to 8 hard-broiled eggs (peeled)
handful of small, tender fresh cilantro stems
Steps:
In a large, heavy skillet, heat the oil over medium heat. First, combine all the whole spices - cinnamon, cardamom, and black peppercorn. Let them sizzle for a minute. Then, add in the onions and stir occasionally. Wait until evenly caramelized and light brown, which can take 25 to 30 minutes. Add in garlic and ginger, and fry, stirring occasionally for another 4 minutes. Add in 1/2 tsp of cumin powder and 1/4 tsp cayenne with the coriander and turmeric.
Add in the tomatoes, salt, and 1 cup of luke warm water. Cover the pot and cook, stirring occasionally, until the mixture thickens and the fat rises to the top. This process could take about 15 minutes. Add in the garam masala and lower the heat. If the sauce isn't runny, add in 1/2 cup of water.
Add all but 5 of the eggs and stir gently. Halve the remaining eggs lengthwise and arrange on top, yolk-side up. Heat until the eggs are warmed through, then top with cilantro.
With the finished egg curry, you would eat it with naan flatbread. You can opt for white bread if you so desire.
