What You Need:
3-1/3 cups tipo 00 flour (this is what makes it authentically Italian and crusty, but you could use all purpose flour)
semolina flour
2 teaspoons instant or active dry yeast
1 teaspoon salt
1-1/4 cups + 3 tablespoons warm water
1 tablespoon olive oil
Steps:
Set the oven to 500℉. Combine flour, salt, and yeast in a mixing bowl and stir to combine. Add the water and olive oil and stir until a raggy dough forms. Put the dough onto a floured surface.
Begin kneading the dough (push with the base of your palm & reform into a ball) for about 8 minutes until the dough has a smooth, stretchy exterior. If the dough is very sticky, add a small amount of flour while kneading.
Divide the dough into 3 equal pieces. Using floured hands, gently shape each half into a ball by folding the dough under itself. Put each ball on a floured surface and dab the dough with some olive oil to keep it moist. Cover dough balls with a damp towel and allow they to rise until doubled in size (about 45 minutes to 1 hour).
Dust a baking sheet with semolina flour. Gently stretch dough into about an 8 inch circle and drape the dough over the knuckles on both of your hands. Slowly rotate it around until it is about an 11 inch circle. Do not overwork or fold the dough.
Bake for about 5-7 minutes with desired sauce and toppings.
