Nina's Lasagna Soup

Chef up a bowl of lasagna soup and it will surely warm you up!

Want to give this recipe a try? Here is the step-by-step lasagna soup recipe shared by our lovely sister, Nina!


What You Need:
  • 1 pound hot Italian sausage

  • 1 onion, peeled and diced

  • 4 cloves garlic, peeled and minced

  • 1 jar marinara or spaghetti sauce

  • 1 can (28 ounces) diced tomatoes

  • 8 cups chicken broth

  • 3 cups campanelle pasta

  • 1 cup whole milk ricotta cheese

  • 1 cup shredded whole milk mozzarella cheese

  • 1/4 teaspoon garlic powder

Steps:
  1. Press the sausage into the bottom of a large soup pot into a patty. Place the pot over medium high heat and let cook for 4 minutes undisturbed, then use a spoon to break up the sausage.

  2. Add the diced onion and stir into the sausage. Continue cooking until the sausage is well browned. Add the garlic and cook for 1 minute, or until fragrant.

  3. Add the marinara or spaghetti sauce, diced tomatoes, and broth, and raise the heat to high, bringing the mixture to a boil.

  4. Drop the heat to medium low. Stir in the pasta and cook until the pasta is tender.

  5. In a small mixing bowl, smash together the ricotta cheese, mozzarella, and garlic powder. Remove the soup from the heat and stir in the cheese mixture until evenly distributed.

  6. If desired, garnish with fresh parsley and/or basil.
