Sophia's Ukrainian Kolachki

Bake these Ukrainian Kolachki pastries and try out the different fillings for a different taste! We love a variety of tasty choices!

What You Need: Dough (15-18 dozen, 1/2 the recipe for smaller proportion)
  • 8 cups flour (4 cups)

  • 1 teaspoon salt (1/2 teaspoon)

  • 1/2 pound butter (1 stick)

  • 8 egg yolks (4 yolks)

  • 1 pound crisco or lard (1 cup)

  • 2 cups heavy cream (1 cup)

  • 2 dry yeast packages mixed with 1/2 cup warm water (1 pack + 1/4 cup water)

  • 1 tablespoon sugar

Steps: Dough
  1. Cut in salt, crisco, and butter into flour as with pie crust.

  2. Add yolks and cream to the dough.

  3. When yeast has risen slightly, add to dough and mix with your hands.

  4. Place in a bowl and refrigerate overnight.

  5. Next day, roll out 1/6 of dough in a heavy layer of powdered sugar until it is 1/4 inch thick and rectangular.

  6. Cut rows. (following the image below)

  7. Spread across the filling of your choosing. (more options below)

  8. Try to avoid the edge of one side to prevent the filling from leaking out.

  9. Roll the pastries, cutting pieces about 5 inches wide.

  10. Place pastries on a greased cookie sheet close together and bake at 375℉ for about 12 minutes or until golden brown.



Filling: Nut Filling
  • 1/2 cup hot milk

  • 1 cup sugar

  • 4 cups finely chopped nuts

  • 1 egg white, beaten until frothy

  • 1 tablespoonful maple flavoring

Steps: Nut Filling
  1. Heat milk to boil. Add maple flavoring.

  2. In a large bowl, beat the egg whites until frothy.

  3. Add chopped nuts and sugar.

  4. Pour maple flavored hot milk over sugar and mix well.

Filling: Poppy Filling
  • 3 pounds poppy butter

  • 1 cup sugar

  • 2 tablespoonfuls fresh orange rind

  • 2 tablespoonfuls frozen orange juice

  • 3/4 cup dark raisins

Steps: Poppy Filling
  1. In a large pot, pour poppy butter, rind, sugar and frozen orange juice.

  2. Add raisins that have been washed in hot water and mix well.

  3. Add about 1 cup of ground nuts to thicken.

Filling: Lekvar Filling
  • 3-1/2 pounds lekvar

  • 1/2 cup sugar

  • 2-1/2 tablespoon fresh orange rind

  • 3-1/2 tablespoon frozen orange juice

  • 1-1/2 tablespoon bread crumbs

Steps: Lekvar Filling
  1. Mix all ingredients well in a bowl.

  2. If filling is too wet or thin, add more breadcrumbs to thicken it up.

Filling: Apricot Filling
  • 5-6 pounds apricot butter

  • 1 pound dried apricot

  • 1/2 cup sugar

  • 2 tablespoon fresh orange rind

  • 3 tablespoon bread crumbs

Steps: Apricot Filling
  1. Grind dried apricots and add them to apricot butter.

  2. Add sugar, rind and bread crumbs and mix well.

  3. Add more bread crumbs if the filling is too wet/thin.
